Tasty Squash & Tomato Recipe

Now that we are starting to get lots of produce from our garden (and the farmers markets too!), it’s a great time to try some new recipes that feature fresh summer vegetables.

Squash & Bean SauteLast Friday we made this delicious Summer Squash & White Bean Saute, since we had a lot of tomatoes from the Demo Garden and some yellow squash from the Farmers’ Market. We liked it so well that we are going to have it again on Tuesday, but play with the spices a bit more.

The recipe is quite simple (follow the link for complete instructions.), and it really highlights the flavors of the vegetables. Onion, garlic, zucchini, squash, beans, tomatoes, fresh oregano…yum! It’s a great vegetarian dish, and if you want to make it vegan, you can just leave out the Parmesan cheese at the end.
