On the Food Side

Bowl of CherriesIf you are looking for one more way to use up some of those summer tomatoes, we tried this delicious Cornbread Salad over the weekend. Go on over to Smitten Kitchen and check out all the details! I didn’t take any pictures, but they wouldn’t do as much justice to the recipe as the ones on the Smitten Kitchen blog.

We had some leftovers, so we added some cubed chicken (and left out the cornbread) for dinner last night. Yum!

On another “food” note, I’ve been reading Real Food: What to Eat and Why by Nina Planck. It is a very interesting read about the foods we used to eat and don’t anymore, and what we do eat now that we shouldn’t. She has lots of information about essential fats, minerals, vitamins, etc throughout the book. I have to say that I don’t agree with every word she writes, but if you are interested in food, food production, and gardening, you should read this book!
