Run! The Eggplant are Coming! The Eggplant are Coming!

I don’t know about you, but that title is pretty indicative of my feelings about eggplant. They are beautiful plants, and the fruit hang on them like jewels. However, in my opinion they are about as edible as a piece of costume jewelry. I have only once eaten a dish with eggplant that I thought was good, but I don’t know what it was called. I haven’t been able to find a recipe that I like. And no, I don’t consider breaded and fried eggplant to be edible either. If a vegetable has to be breaded and fried to be edible, you have lost all the nutritional value.

We have 3 varieties of Eggplant in the Demo Garden: Hansel, Gretel, and Zebra. Hansel and Gretel are both All America Selections, which means they should do well all over the U.S. Hansel and Gretel are both producing, while Zebra is a couple weeks later.
